My mother always told me, “think of your body as the car for your soul. Would you rather be driving around an old beater or a brand new Mercedes?” We all want to both look and feel good, and these bodies are the only ones we get—which means we have to take care of them from the inside out if we want them to take care of us. One of the best ways to do that is by eating a diet rich in raw, organic fruits and veggies. When you cook your food, you cook out the enzymes your body needs to break it all down, so try to always eat something raw with every meal to aid in digestion. I keep a huge batch of this salad in my fridge at all times. It is so incredibly flavorful and delicious that it’s something I never seem to get sick of.
1 8oz. block of feta cubed
½ cup of pitted calmata olives sliced
1 cucumber – sliced and quartered
1 red bell pepper – diced
1 yellow bell pepper – diced
1 pint of cherry tomatoes – halved
½ of a red onion – sliced thin
2 teaspoon of dried oregano
1 teaspoon of dijon mustard
4 cloves of garlic – minced
½ cup red wine vinegar
½ cup of olive oil
1 teaspoon sea salt or kosher salt
Fresh ground pepper to taste
Directions: Place all vegetables in a large bowl. In a cup with a lid, mix together the oregano, mustard, garlic, red wine vinegar, olive oil, salt and pepper. Shake vigorously to combine all ingredients. Pour dressing over veggies and let sit for a while at room temp before serving.
